The Scibilia family has been active in the olive oil sector for four generations and founded OLITAR s.r.l. in 1984 in Tarquinia, an ancient Etruscan land at the edge of the Lazio Maremma. This area, where olive groves have long characterized the landscape as depicted in the paintings of the prestigious Necropoli dei Monterozzi's Etruscan tombs, has seen the company grow and evolve.
Initially managed almost exclusively by the family and operating in a traditional manner, OLITAR processed only olives supplied by local producers. Over time, in response to increasing demand, the company expanded its operations to include a packaging and bottling laboratory. This expansion allowed the launch of "DON ANGELO," a high-quality oil that retains the distinctive traits of craftsmanship.
Today, OLITAR's primary goal is to ensure the supreme quality of its oil, enhancing its goodness, authenticity, fragrance, and bold taste that recalls fresh and healthy fruit. The superior quality of the product results not only from refined processing techniques but also from the intuition and experience of the Master Oleario, who adjusts processing parameters based on seasonal variations in the olives to consistently produce an excellent Extra Virgin oil.
